Chitosanase
Chitosanase is a glycosyl hydrolase that catalyzes the endo hydrolysis of β-1,4-glycosidic bonds of partially acetylated chitosan to release chitosan oligosaccharides (COS) . Chitosanases can convert high molecular weight chitosan into functional chitooligosaccharides with low molecular weight[1][2].
