MCAD proteins play a key role in mitochondrial fatty acid beta-oxidation, initiating the breakdown of fatty acids into acetyl-CoA for energy production. Specifically, MCAD catalyzes the removal of hydrogen from C-2 and C-3 of linear fatty acyl-CoA thioesters to form trans-2-enoyl-CoA.
