Diphenyliodonium (iodide)
Diphenyliodonium iodide is an inhibitor of reactive oxygen species (ROS) . Diphenyliodonium iodide can inhibit the accumulation of bisdemethoxycurcumin in fresh-cut yam by inhibiting the phenylpropanoid pathway and the biosynthesis of bisdemethoxycurcumin, thereby preventing the yellowing of fresh-cut yam. Diphenyliodonium iodide can be used in medicine and fruit preservation[1].
