β-Carotene 5,6-epoxide, a carotenoid, is a degradation product of β-carotene. β-Carotene 5,6-epoxide can be found in isolated chloroplasts. Carotenoids are important biological active, and may regulate cellular differentiation, growth control, photooxidative protection, cell membrane stability, photosynthesis, vision process and nutrition[1].
