Chitosanase is a glycoside hydrolase that catalyzes the endohydrolysis of β-1,4-glycosidic bonds in partially acetylated chitosan, releasing chitooligosaccharides (COS) . It transforms high molecular weight chitosan into low molecular weight functional chitooligosaccharides.
