Background
Pectinase is a multi-enzyme complex that decomposes pectin, usually including protopectinase, pectin methyl ester hydrolase, and pectin acidase. Through their combined action, pectin can be completely decomposed. Natural pectin is converted into water-soluble pectin under the action of protopectinase; pectin is catalyzed by pectin methyl ester hydrolase to remove the methyl ester group to produce pectin acid; pectin acid is degraded by pectin hydrolases and pectin lyases to produce galacturonic acid.
