Thioglucosidase, derived from Sinapis alba (white mustard) seed (EC 3.2.1.147), catalyzes the hydrolysis of the S-glycosidic bond in thio-glucoside substrates, producing an unstable aglycone. This intermediate undergoes rearrangement and sulfate group elimination, leading primarily to the formation of isothiocyanates, with the production of thiocyanates and nitriles as well.
