Thaumatins, a natural sweet-tasting protein from Thaumatococcus daniellii , exhibits a sweetness potency approximately 100,000 times that of sucrose on a molar basis. This product is used in research on taste receptors, sweetener mechanisms, and as a tool in both in vitro binding assays and in vivo sensory studies.
