Sucrose phosphorylase

Sucrose phosphorylase is a bacterial enzyme that reversibly catalyzes the phosphorolysis of sucrose to α-D-glucose-1-phosphate and fructose. It also exhibits transglucosylation activity, enabling its use in biocatalysis for synthesizing novel α-glucosides in vitro, with applications in carbohydrate chemistry and enzymatic synthesis research.
