Pediocin PA-1 is a broad-spectrum lactic acid bacterial bacteriocin that inhibits the activity of foodborne pathogens such as Listeria monocytogenes and Gram-positive bacteria. Pediocin PA-1 can be used as a food biopreservative[1].
