Denatonium benzoate (THS-839) is a quaternary ammonium salt known as the world's most bitter substance. It is structurally analogous to lidocaine but features a benzyl group on the amino nitrogen. This compound is extensively used as an aversive agent in both in vitro and in vivo safety studies to prevent accidental ingestion.
