Isomalt (Palatinitol) is a sugar alcohol composed of equimolar amounts of 1,6-GPS and 1,6-GPM. It is widely used as a low-calorie sweetener in food research and as a non-metabolizable sugar analog in studies of carbohydrate metabolism, both in vitro and in vivo.
