Serum amyloid A (SAA) proteins are acute-phase apolipoproteins whose plasma levels rise rapidly during inflammation, potentially correlating better with early disease activity than other markers. Beyond hepatic production, SAA is also synthesized by adipocytes, linking it to metabolic research.
