Phosphofructokinase from Bacillus stearothermophilus is a key enzyme in sugar metabolism that catalyzes the conversion of fructose-6-phosphate to fructose-1,6-bisphosphate during glycolysis. The enzyme's ability to bind fructose-6-phosphate can be inhibited by phosphoenolpyruvate (PEP), thereby regulating the rate of glycolysis. Phosphofructokinase from Bacillus stearothermophilus can be used for the measurement of fructose-6-phosphate levels[1][2].
